Sheridan Maine is delighted to be partnering with a luxury property brand who are recruiting for a Cost Controller.  This person needs to be a dedicated, diligent and commercial individual who can support their growth.
 
Reporting to the Director of Finance, the responsibilities of the Cost Controller include:

  • To highlight and investigate high value, high levels and slow-moving inventory items
  • To perform spot-checks in the Departments and Outlets to ensure that all revenue is being posted and that cost control systems are being maintained
  • To assist Department Managers with costing food and beverage recipes
  • Actively find ways to control costs and minimise wastage
  • To assist with full menu costing and theoretical cost analysis
  • To assist Purchasing and Accounts Payable by matching delivery dockets with invoices
  • To control departmental transfer and issue procedures
  • Assist the Purchasing Manager in overseeing the tendering process for the supply of large volume items to the Hotel
  • To prepare ad-hoc expense trend reports for high expenditure items
  • To be involved in formal negotiations for annual or large contracts involving inventory items, such as pouring brands, mini bar items, general supplies, etc.
  • To ensure that standard pricing tables are maintained and as current as possible
  • To check that all outlets/departments do not overstock, especially during month-end
  • To maintain a daily computerised perpetual beverage and tobacco inventory system
  • To prepare trend reports on inventory value for Senior Management
  • To assist in the preparation of any ad-hoc analysis or reports as requested by Head Office/Owners or the Senior Finance Management
 
To be considered for the role of Cost Controller, the following experience is required:
  • Experience of working in a similar role – Cost Control / Procurement / Revenue
  • Experience of working in the hospitality industry
 
Travel to Amsterdam is required once a month.
